Ginger & Nut Protein Energy Balls

How many times have you had an energy dip and needed a ‘hit’ to wake you up again, keep you going a little longer? Many people experience this mid afternoon and are tempted to reach for a cake, biscuit, sweet, chocolate or even coffee to give the much needed kick-start.

Of course I’m going to tell you that this won’t serve you at all! Any of these treats will spike your blood sugar giving you a short lived energy boost, only for you to crash again a short while later and you’ll probably reach out for more. Sound familiar?

To boost energy and balance blood sugar for longer, a mix of protein, carbs and fats is what’s needed.

These really quick and simple energy balls made with nuts, seeds, dates, and ginger for taste definitely tick the energy boost box. They’re also fabulous post workout! And if you don’t like ginger, try adding a little lime or lemon zest, honey and cinnamon. Get creative and enjoy!

  • 1/2 cup each raw almonds, cashews, and pitted dates
  • 1 tbsp chia seeds
  • 1/2-inch- 1-inch piece of fresh ginger, depending on how much gingery kick you like!
  • Dessicated coconut (optional)

Here’s How:

  1. Combine all the ingredients together in a high speed blender or food processor and blend until the mixture starts to form a ball.
  2. Roll into tablespoon sized balls
  3. Roll in dessicated coconut (optional)
  4. Refrigerate or freeze for later.
